As the craft beer industry grows, it becomes increasingly important to achieve that perfect pour.  N2 is the key ingredient for providing the extra pressure necessary to propel the beer through a draft beer system, and also the main ingredient for obtaining the cascading effect which results in the tiny bubbles and desired creamy texture that customers are anxiously awaiting.  The desirable blend of gas to maintain keg quality is typically 75% N2, 25% CO2. Too much CO2 in the blend will cause foam and over-carbonation, resulting in waste when disposing the foam.  Too little CO2 in the mix will cause the beer to go flat.  The right amount will cause you to glance sideways down the bar at the person who just ordered that beer and think to yourself…Damn that beer looks good!!
